Fig Roll with Almonds & Honey

If you love figs, you will be delighted with this recipe. A sweet and tasty combination for all occasions, especially with tea or coffee. Made with dried figs, almonds, walnuts and honey.

For 4-6 servings

Ingredients

  • 400g dried figs from “askada” finely chopped
  • 200g raw almonds (150g peeled and chopped) + (50g peeled only)
  • 50g walnuts chopped, or with hazelnuts
  • 4 full tablespoons heather honey
  • 1/2 or 1 teaspoon ground cinnamon

Preparation

  1. If you use unpeeled almonds, simply soak them briefly in hot water for about 10 minutes and then the shell can be easily removed. Allow the almonds to dry well before chopping them in a blender. Roast 50g of the almonds at 160°C in the oven for about 10 min until they turn slightly brown and then chop them up too.
  2. Put the 150g chopped almonds, the 50g chopped walnuts, the 400g chopped figs and the teaspoon of cinnamon in a bowl and stir well.
  3. Sprinkle 4 tablespoons of heather honey over the mixture and work gently with your hands until all the ingredients are combined.
  4. Place a sheet of baking paper on the work surface and spread the roasted and chopped almonds on it. Shape the fig mixture into a roll by hand and place it over the almonds. Roll the mixture into a roll with the help of the baking paper and leave it to rest in the fridge for 1 hour.
  5. Decorate the finished fig roll with a little honey and thinly sliced figs. Cut into pieces and serve.
