Beluga lentils are extremely tasty, they are called the caviar of lentils and one of their characteristics is that they are easier to digest than classic lentils.
They are grown in the cool, dry climates of central Greece. Beluga lentils are rich in fibre and folic acid.
Beluga lentils do not need to be soaked overnight. Wash them and put them in twice the amount of water without salt and cook them on a low heat for 20-30 minutes, depending on how you like them. Use for salads or as a side dish like green lentils.
