Graviera cheese PDO (protected designation of origin) from Naxos. It is made from a minimum of 80% cow’s milk and a maximum of 20% sheep’s and goat’s milk with the addition of traditional rennet.
This hard cheese has a pale yellow colour, a thin dry rind, a compact elastic mass, characteristic small scattered holes, a fine aroma, a sweet and delicate taste and a very characteristic aftertaste.
