Kavourmas is a traditional delicacy from Thrace. The sausage preparation is traditionally made in northern Greece and is a typical dish of the region. The beef is first salted to dry it out and then cooked and braised over a low flame with spices (nutmeg, allspice, cinnamon and cloves).
It goes well with red wines with character, with ouzo or tsipouro. It can be eaten cold but also warm. Sautéing it briefly in the pan releases its flavours and it can be spiced with chilli. Kavourmas can also be prepared with scrambled eggs.
