Traditional Kefalotyri from the cheese dairy of Ios Island. It is made in the Diaselia area from pure goat’s milk of high quality and nutritional value. It is perhaps the oldest cheese of all and has an oily and slightly salty taste. It is best served alone or accompanied by fruit and wine.
The production of cheese on the island of Ios, is based on goats and sheep from the local tribes of the island, whose origins are lost in the depths of the centuries. Sheep and goat breeding on the island began in ancient times.
