The organic legumes have been grown in the Greek regions of Prespa and Viotia for over a hundred years in the traditional way, without using pesticides. The Fava can be used for many dishes. When the flat peas “Lathyrus” are boiled and mashed, you get the famous fava dish. This dish goes perfectly with capers, sea fennel, sun-dried tomatoes or caramelised onions and can be combined with ouzo or raki. Try fried cep, grilled octopus, smoked pork or to prepare delicious fava patties. Frame with Greek olive oil.
The legumes boil easily without losing their shape, keeping their taste and offering the ability to cook traditional and nutritional gourmet plates. They stand out for their taste, shape and organoleptic characteristics due to microclimate areas, rich soil, abundant water, rich flora and producers care.
Before soaking, spread the legumes on a surface and rid them of small stones, dark legumes or other small debris.
