Saganaki with Kavourma

Kavourmas is a traditional delicacy from Thrace. The sausage preparation is traditionally made in northern Greece and is a typical dish of the region. It goes well with red wines of character, with ouzo or tsipouro.

For 2 servings


  • 150g Kavourmas
  • 1 green pepper long, sliced
  • 1 onion, finely chopped
  • 2 spring onions, with leaves, finely chopped
  • 2 eggs (separate)
  • 3-4 tablespoons olive oil
  • Salt
  • Pepper

Preparation & Cooking

  1. Heat the olive oil in a pan and fry the dried onion.
  2. Add the Kavourmas, which you have opened a little with your hands beforehand. Cook for 3 minutes over medium heat. Then add the spring onions and stir for another minute.
  3. Add the egg white from 2 eggs first and stir until the egg white becomes thick. Then you can empty the egg yolk over it.
  4. Season with salt and pepper and serve after 2 minutes.
