Trahana Soup with Tomatoes

Trahana Soup with Tomatoes

A traditional Greek recipe is Trahanas soup with tomatoes, ideal for autumn and winter. The soup is quick to prepare and can be a full meal.

  • 300 g savoury or sweet trahana
  • 1 onion, finely diced
  • 400 g strained tomatoes
  • 1300 ml water or vegetable stock if desired
  • 1 tsp. tomato paste
  • 1 tsp. paprika, smoked
  • Salt
  • Pepper
  • Olive oil

Preparation & Cooking

  1. Put a saucepan on medium heat and let it get hot, then add some olive oil and cook the onion for about 2 minutes until caramelised.
  2. Add the trahana, the strained tomatoes, the water (with or without vegetable stock), and the tomato paste. Cover the pan and let the soup simmer for 10 minutes.
  3. After 10 minutes, add the smoked paprika, salt and pepper and let the soup cook for another 5 minutes.
  4. Do not cook the trahana over a high flame and always make sure that there is enough water.
  5. When the soup is ready, serve it warm with some feta and olive oil.
