Trahana Soup with Tomatoes

A traditional Greek recipe is Trahanas soup with tomatoes, ideal for autumn and winter. The soup is quick to prepare and can be a full meal.
Ingredients
- 300 g savoury or sweet trahana
- 1 onion, finely diced
- 400 g strained tomatoes
- 1300 ml water or vegetable stock if desired
- 1 tsp. tomato paste
- 1 tsp. paprika, smoked
- Salt
- Pepper
- Olive oil
Preparation & Cooking
- Put a saucepan on medium heat and let it get hot, then add some olive oil and cook the onion for about 2 minutes until caramelised.
- Add the trahana, the strained tomatoes, the water (with or without vegetable stock), and the tomato paste. Cover the pan and let the soup simmer for 10 minutes.
- After 10 minutes, add the smoked paprika, salt and pepper and let the soup cook for another 5 minutes.
- Do not cook the trahana over a high flame and always make sure that there is enough water.
- When the soup is ready, serve it warm with some feta and olive oil.
