Lentil soup is a classic traditional dish. It is a nutritious and simple soup that can be eaten all year round.
For 6-8 servings
Ingredients
- 500g green lentils
- 150mL olive oil
- 1,5L water
- 2 white onions, finely chopped
- 2 carrots, sliced or chopped
- 2 stalks of celery, finely chopped
- 2 cloves of garlic, finely chopped
- 2 medium tomatoes, finely chopped
- 2 tablespoons tomato paste
- 2 bay leaves
- 1 teaspoon oregano
- 2 tablespoons white wine vinegar
- salt
- pepper
Preparation & Cooking
- Before cooking, spread the lentils on a surface or plate and remove small stones, or other small impurities. Put the lentils in a sieve and rinse with water.
- Place a large pot over medium heat, add 2-3 tablespoons of olive oil and sauté the onions briefly.
- Then add the carrots and celery to the pot and sauté for 3-5 minutes until softened.
- Now add the garlic, the bay leaves and oregano and mix well.
- Add straight after the lentils, chopped tomatoes, tomato paste and the water and stir well.
- Cook the lentils over medium heat for about 25-35 minutes, until tender.
- Remove the pot from the heat, season with salt and pepper and stir with the vinegar and a little olive oil.
- Serve the lentils warm with the feta cheese, olives and bread.
