Traditional Lentil Soup – Fakes

Lentil soup is a classic traditional dish. It is a nutritious and simple soup that can be eaten all year round.

For 6-8 servings

Ingredients

  • 500g green lentils
  • 150mL olive oil
  • 1,5L water
  • 2 white onions, finely chopped
  • 2 carrots, sliced or chopped
  • 2 stalks of celery, finely chopped
  • 2 cloves of garlic, finely chopped
  • 2 medium tomatoes, finely chopped
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon oregano
  • 2 tablespoons white wine vinegar
  • salt
  • pepper

Preparation & Cooking

  1. Before cooking, spread the lentils on a surface or plate and remove small stones, or other small impurities. Put the lentils in a sieve and rinse with water.
  2. Place a large pot over medium heat, add 2-3 tablespoons of olive oil and sauté the onions briefly.
  3. Then add the carrots and celery to the pot and sauté for 3-5 minutes until softened.
  4. Now add the garlic, the bay leaves and oregano and mix well.
  5. Add straight after the lentils, chopped tomatoes, tomato paste and the water and stir well.
  6. Cook the lentils over medium heat for about 25-35 minutes, until tender.
  7. Remove the pot from the heat, season with salt and pepper and stir with the vinegar and a little olive oil.
  8. Serve the lentils warm with the feta cheese, olives and bread.
