Santorini Assysrtiko “Natural ferment” from the Gavalas winery. The grapes are harvested in early to mid-August and then pressed in stainless steel tanks under controlled conditions. The result is the interplay of the explosive, autochthonous Assyrtiko variety with the intensity of natural wild yeasts, which convey more complexity and body than conventional yeasts.

Tasting notes
It presents itself in a beautiful light yellow with golden accents. The bouquet has aromas of pears and white flowers, dried apricots, walnuts, fresh celery, some banana and notes of petrol. Full-bodied, creamy texture with high acidity and long aftertaste.
