Black chickpeas are an old traditional variety where they have always been used for rustic soups that are rich in flavour and a velvety texture. They are grown in the cool, dry climates of central Greece. They have a slightly more elegant flavour than ordinary chickpeas and are distinguished by their black colour. However, they can be cooked and used in the same way and make a unique and impressive hummus.
