Wild capers from the island Tinos. On the island of Tinos, the wild capers are handpicked in early summer. In the Aegean you can find the immature, dark green buds on the wild caper bush. For preservation, they are “salt-hardened” with a coarse sea salt (instead of being pickled in vinegar and brine), so they become extremely crispy and have an intense taste. They have a special tangy and earthy taste.
Use it for the best tartar sauce, or serve it with cold-smoked salmon or smoked salmon dishes, greek salad, or even with olives to garnish your martini. A real Greek food!
