Kritharaki – Emmer Orzo Wholegrain spelled from 100% Greek organic durum wheat (Triticum dicoccum).
Kritharaki are small pasta in the form of rice. They are also called Orzo or Manestra. This ancient wheat (also called Zea) has a natural value for the body.
One method of preparation would be similar to risotto, sautéing the pasta in a saucepan and filling with broth. This would be the Kritharoto pasta dish. The other way would be to cook the pasta in salted water beforehand and then fry them in the pan with onions and vegetables.
In principle, Kritharaki is as flexible in its preparation as other types of pasta. They taste with tomato sauce, with vegetables, anchovies, capers, chicken or beef, as well as in salads or as a side dish.
