The traditional smoked Metsovo cheese (Metsovone) is a special delicacy for a mezze, but it is also suitable for other purposes.
Serve Metsovo cheese pure for cheese platters after taking it out of the refrigerator for 20 minutes to enjoy its rich flavour and long aftertaste. Grate it on the grill or over fried potatoes or baked mushrooms to melt and enrich their earthy flavour.
Metsovone is the most famous and also the most widespread cheese produced by the Tsiotsa Foundation Cheese Factory, and it is also one of the most special cheeses in Greece. It is a semi-hard to hard cheese with a slightly salty and spicy taste and a pleasant aroma. It is a PDO product made in the Metsovo area from cow’s milk (90%) and the rest from goat’s or sheep’s milk.
After the first stage of cheese making, the cheese is dried, tied with strings and matured for at least three months. After maturing, it is smoked for 1-2 days with natural smoke from burnt grass, leaves and herbs from the region, made overripe and ready for sale.
